White quinoa originates from South America, where it has been cultivated for thousands of years and was a staple food of the Inca civilization. Although often compared to rice or grains due to its appearance and cooking method, quinoa is not a cereal. It belongs to the group of pseudocereals and is naturally gluten-free.
What Is Quinoa?

Quinoa grows naturally in the high-altitude regions of Peru, Bolivia, Ecuador, and Chile. It is sometimes called “Peruvian rice,” but biologically it is closer to plants such as amaranth and buckwheat. Quinoa is valued for its naturally high nutritional density and plant protein content.

Only a few people know that, due to its close relation to spinach and chard, not only quinoa seeds but also its leaves are edible.

Quinoa in the Kitchen

White quinoa has a mild, slightly nutty flavor. Before cooking, rinse thoroughly under running water and optionally toast briefly in a dry pan to enhance flavor. Cook in a ratio of 1 part quinoa to 2 parts water. After about 15 minutes, when the grains release small sprouts, remove from heat and let rest covered for another 10–15 minutes.

Quinoa works well as an alternative to groats, pasta, or potatoes. It pairs perfectly with vegetables, meat, sauces, salads, plant-based patties, and lunch boxes. It can also be used in both savory and sweet dishes.
